Modifying schedule in startup-config

Just one quick question,  

can I change the schedules in the startup-config instead of via SSH?  

Will it work if I download the startup-config from my router, make the changes in a text editor, and upload the startup-config again to my router?

Yes, it will. The device will automatically reboot as soon as you upload the file. The startup-config only applies when the device starts up.
